This is a favorite meal around our house. As the days have been in the 90’s around here, it is nice to make something I don’t have to cook. I plan ahead for this dish, so we will have a chicken dinner and I will take the left over chicken and make the salad the next night. This will serve 3-4 people.
1 cup diced cooked chicken
1-2 Apples cut in bite size pieces
2-3 stalks of Celery, diced
15 Grapes, halved
1/4 cup chopped Pecans or Walnuts
1/2 cup plain Greek Yogurt
3 Tab. Honey
1/2 tea. cinnamon
1/2 tea. vanilla
Mix all the ingredients together and chill for an hour to let flavors blend. You can serve on lettuce leaves, make into sandwiches, or roll in a tortilla for a wrap.
Options: You can add raisins or poppy seeds. If you like savory instead of sweet; leave out the honey, cinnamon and vanilla, instead add 1/2 tea. dry mustard, diced onion and black pepper to taste.
