It has been a tough week at our house. We have all been sick with an awful cold, and we took turns taking care of each other. Finally we are all feeling better. Here is my favorite chicken soup recipe. It taste great when you are under the weather, hope you like it.
Marlas Chicken Noodle Soup
2 Chicken legs, skin removed
½ Cup chopped Celery
½ Cup chopped Carrots
½ Cup diced Onions
Mrs. Dash seasoning, to taste.
½ Cup dry noodles, I like Fideo cut spaghetti
1 Tablespoon low sodium Chicken Bullion
Garlic, I used about a 1 ½ teaspoon of minced garlic. Adjust to your taste.
1 Tablespoon of Butter
½ Cup of Half-n-Half
In a large pan heat oil and add carrots, onion and celery, cook until onions are translucent. Remove from pan and set aside. In the same pan add 4 cups of water and boil chicken legs, cook 15-20 minutes until done. Remove legs and set aside. Add noodles to boiling chicken water (now broth, may need to add a little more water) and cook according to package directions for Al dente. While noodles are cooking remove meat from chicken legs and cut into bite size pieces. When noodles are done add vegetables and meat back to pan, turn heat done to medium-low and add Mrs. Dash, garlic and bullion. When that is hot add butter and half-n-half and serve. Add hot sauce to taste.
