Spice Quinoa

This is a nice side dish.  If you haven’t cooked with quinoa it really is tasty when seasoned.  Just by itself is rather bland.  But being a seed it is a source of protein.  In this recipe you need to make sure you are using low or no sodium chicken broth.  Curry powder is a blend of spices so check to see the sodium content.  Raisins are not the best thing, not the worst thing.  If I was serving this cold I would leave out the raisins and add chopped apple and grapes (adding after quinoa has cooled).  I have my own dehydrator so I make my own dried cranberries and I would use those in place of the raisins.  This recipe is from All Recipes.

Spiced Quinoa

spiced quinoa

1 tablespoon olive oil
1 small onion, chopped
1 clove garlic, minced
3/4 cup quinoa
1 1/2 teaspoons curry powder1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon cumin
1/4 teaspoon cinnamon
1 1/2 cups chicken stock
1 (14 ounce) can garbanzo beans, drained and rinsed
1/2 cup toasted pine nuts
1/2 cup raisins, soaked in hot water and drained (optional)

  1. Stir together the olive oil, onion, and garlic in a saucepan over medium heat until the onion has softened and turned translucent, about 5 minutes. Stir in the quinoa, curry powder, salt, pepper, cumin, cinnamon, and chicken stock. Bring to a boil, then reduce heat to medium-low, cover, and simmer 20 minutes until the quinoa is tender.
  2. Once the quinoa has finished cooking, stir in the drained garbanzo beans, toasted pine nuts, and raisins. Serve warm or cold.

Cream of Soup Mix Recipe

One of the things about this diet or any for that matter is missing your old favorite recipes.  With using low sodium that pretty much leaves out any canned soup.  So no recipes made with cream soup in them.  What a minute, I can make a dry mix and leave out the salt!!  Thanks One Orange Giraffe for posting this recipe.  Herb Ox makes a no sodium bouillon.  Most stores that have a health food section carry this brand and you can also find it on Amazon.

cream soup mix

Cream of “something” soup recipe
1 cup non-fat dried milk
3/4 cup cornstarch
1/4 cup bouillon (if you have cubes you have to smash them up)
You can use whatever kind you like (ie, beef, veggie)
4 Tablespoons freeze-dried minced onions (I used the minced onions from Sam’s Club)
1 teaspoon dried basil
1 teaspoon dried thyme (I couldn’t find the thyme so I used dried parsley instead)
1 teaspoon pepper
(For the equivalent of one can of condensed cream soup, mix 1/3 cup dry mix with 1 1/4 cup water. Cook until thick)
